Mansaf

Mansaf is the most popular dish in Jordan and it served during family meals, weddings or any occasion.

Preparation Time: 10 minutes approximately
Cooking Time: 90 minutes approximately
Serves: 4 persons

All you need

3 cups of rice
1 kg lamb meat
1 liter yoghurt prepared from hard yoghurt ball
6 cups of water
2 tbsps. vegetable oil
1/2 tsp. cardamom
2 cinnamon sticks
1/2 tsp. al alali Ground Cinnamon
1/4 tsp. al alali Ground Black Pepper
1/5 tsp. saffron
2 bay leaves
1 tbsp. flour
1 egg
1 medium onion, sliced
Salt to taste
Roasted pine seeds
Roasted almonds

Directions
  • In a large pot, cook lamb meat, add onions, cinnamon stick, salt, cardamom, al alali Ground Black Pepper and bay leaves. Cook over moderate heat until meat is tender
  • Meanwhile, in a bowl, soak rice for 20 minutes
  • To prepare mansaf soup, in a blender, mix yoghurt, salt, al alali Ground Cinnamon powder, saffron, flour and egg. In a cooking pot, bring mixture to boil
  • In a pot, heat vegetable oil. Drain the soaked rice and cook on low heat.
  • Add 3 cups of lamb broth to the rice and bring the broth to boil
  • Add a cup of lamb broth to the mansaf soup, add the cooked lamb meat. Bring the mixture to boil
  • Place a piece of flat bread on the serving plate and add the rice with topping of meat
  • Garnish with roasted pine seeds and almonds
  • Serve and enjoy!
