Foul Akhdar Bi Zeit


Fresh Lebanese green broad beans in a garlicky coriander and olive oil sauce — perfect as a side or mezze! 🫘🧄🫒

🥣 Ingredients

  • 3 kg fresh green broad beans 🫘
  • 2 large brown onions 🧅
  • 1 1/2 heads garlic 🧄
  • 2 small red chilies 🌶️ (optional)
  • 1 tbsp ground coriander
  • 1 1/2 cups fresh coriander 🌿
  • 2 cups extra virgin olive oil 🫒
  • 1 tbsp salt, or to taste 🧂
  • 2 1/2 cups water 💧
  • 1 tsp black pepper, cracked, or to taste

👩‍🍳 Instructions

1. Wash, de-string, and cut 3 kg broad beans into bite-sized pieces. 🫘✂️

2. Peel and finely dice 2 onions. 🧅

3. Peel and crush 1 1/2 heads garlic. 🧄

4. Wash and chop 1 1/2 cups fresh coriander, discarding tough stems. Optional: finely chop 2 red chilies. 🌿🌶️

5. In a large pot, heat 1/2 cup olive oil over high heat. Add optional chilies. Add onions and garlic, sweating until translucent.

6. Stir onions for 10 minutes, then add another 1/2 cup olive oil. Repeat until all 2 cups olive oil are used. 🫒

7. Add coriander and fry for 10 minutes. Stir in 1 tbsp ground coriander, 1 tbsp salt, and 1 tsp black pepper, frying until golden brown. 🌿✨

8. Add the broad beans and 2 1/2 cups water. Reduce heat to medium and cook for 50 minutes, stirring every 10–15 minutes, until beans are tender. 💧🫘

9. Serve with the cooking juices and Lebanese bread. Best enjoyed cold. 🥖😋
