Kibbeh Nayyeh (Lebanese Raw Kibbeh)
Kibbeh Nayyeh is a classic Lebanese dish made from raw beef, bulgur, fresh herbs, and spices. It’s smooth, flavorful, and traditionally served on special occasions with olive oil and fresh mint.
Ingredients
1 cup fine #1 bulgur wheat
1 cup water (plus more for shaping)
1 lb (450 g) 100% lean ground beef
1 red pepper, seeded
4 tbsp unsalted butter
2 tsp salt
1 small onion, quartered
¼ cup kamouneh spice mixture
¼ cup fresh basil leaves, packed
¼ cup fresh mint, packed (plus more for serving)
Olive oil, for serving
Instructions
1️⃣ Soak the bulgur:
Place the bulgur and water in a small bowl and let it soak for about 15 minutes, until all the water is absorbed. Fluff with a fork.
2️⃣ Make the meat paste:
In a food processor, blend the beef, red pepper, butter, and salt until the meat forms a smooth dough ball (about 5 minutes). Scrape the sides as needed. Transfer to a large bowl and refrigerate while preparing the kamouneh mixture.
3️⃣ Prepare the kamouneh mixture:
In the same food processor, add the soaked bulgur, onion, kamouneh spice, basil, and mint. Blend until well combined.
4️⃣ Mix the kibbeh:
Combine the bulgur mixture with the meat paste. Wet your hands with cold water and knead the mixture until smooth and fully combined (about 5 minutes), adding a little water to your hands as needed.
5️⃣ Shape and serve:
Spread the kibbeh evenly on a serving plate. Use a knife or fork to create decorative lines or patterns. Garnish with fresh mint and drizzle with extra virgin olive oil. Serve immediately with pita bread.

- Kibbeh Nayyeh should be eaten fresh within 24 hours. Do not store leftovers; if needed, cook the meat before storing.
- Buy the meat fresh from a trusted butcher and prepare it the same day.
- Work quickly to keep the meat safe at cool temperatures.

- Stop processing when the mixture forms a dough ball – that’s your sign it’s ready.
