Hot Chicken Fattah |
Ingredients
Boiled chicken, cut into medium size cubes
3 cups rice
Cook chicken broth
1 tsp dry coriander
2 tbsp margarine
¼ cup lemon juice
1 tbsp garlic, minced
2 hot pepper, minced
1 tbsp vinegar
salt
black pepper
fried pita bead cubes
Parsley, chopped
Almond, Fried
Pine nuts, Fried
Directions
Heat the margarine in a saucepan then saute rice, add salt and pepper and stir. Add chicken broth, stir then leave it until well cooked.
Marinade: In a bowl, mix lemon, vinegar, garlic, salt and pepper. Add hot pepper, coriander and stir.
In a separate bowl, mix some chicken broth and some of the marinade which is prepared in the previous step.
In a serving dish, spread fried pita bread, before serving pour the chicken broth and the marinade mixture over the fried pita bread.
Cover pita bread with the cooked rice. Spread chicken over the rice then distribute the marinade over chicken.
Garnish with parsley, almond and pine nuts. Serve hot
