Cooking easy and delicious chicken with rice kabsa recipe
Welcome to today’s cooking video! We're making a delicious and aromatic Chicken Kabsa. This hearty dish combines tender chicken, flavorful spices, and perfectly cooked basmati rice. Let’s get started!
Ingredients:
One chopped onion (300 grams)
Cinnamon sticks, cardamom pods, cloves, and bay leaves
One whole chicken, cut into pieces (about 1000 grams), skin removed
One tbsp salt
One tsp each of cumin, coriander, paprika, and black pepper
Half a tsp each of turmeric and ginger
Two tbsps tomato paste (40 grams)
One tbsp minced garlic (15 grams)
One chopped bell pepper (130 grams)
One grated carrot (100 grams)
Three diced tomatoes (350 grams)
Eight cups hot water
Two dried lemons
A few whole hot peppers
Two cups long grain basmati rice (400 grams), washed and soaked
Fresh coriander for garnish
Instructions:
1. Heat a pot over medium heat and add a little vegetable oil.
2. Sauté the chopped onion until soft and golden.
3. Stir in the cinnamon sticks, cardamom pods, cloves, and bay leaves.
4. Add the chicken pieces and stir well.
5. Season with salt, cumin, coriander, paprika, black pepper, turmeric, and ginger.
6. Mix in the tomato paste and minced garlic.
7. Add the chopped bell peppers, grated carrots, and diced tomatoes. Stir everything together.
8. Pour in the hot water, ensuring the chicken is fully covered.
9. Add the dried lemons and whole hot peppers.
10. Cover and cook over medium heat for 30 minutes.
11. After 30 minutes, stir in the washed and soaked basmati rice.
12. Cook covered over medium heat until the water level decreases.
13. Reduce the heat to low, cover the pot, and cook for 25 minutes until the rice is fully cooked.
14. Garnish with fresh coriander and serve.
