This Kabsa Recipe Changes Everything — Bold, Delicious & Easy!

🍽️ Ingredients
- 1 onion, quartered (200 g)
- 3 tomatoes (300 g)
- 30 g guajillo peppers
- Dried chili peppers, to taste
- 1 cinnamon stick
- 5 cardamom pods
- 8 cloves
- 5 cups hot water
- 25 g garlic
- 1 tbsp cumin
- 1 tbsp coriander
- 1 tsp turmeric
- 1 kg beef or lamb
- 1 tsp salt (plus more to taste)
- 1 tsp black pepper
- 500 g basmati rice, rinsed and soaked
- Fresh coriander, chopped (for garnish)
- A little vegetable oil
👩🍳 Instructions
1️⃣ Make the Sauce Base
Add the onion, tomatoes, guajillo peppers, dried chili peppers, cinnamon stick, cardamom pods, cloves, and hot water to a pot. Cook over medium heat for 15 minutes.
2️⃣ Blend the Sauce
Remove and discard the tomato skins. Transfer everything to a blender and blend until smooth.
3️⃣ Season the Sauce
Add garlic, cumin, coriander, and turmeric to the mixture. Blend again until fully combined, then set aside.
4️⃣ Brown the Meat
Heat a little oil in a large pot. Add the beef or lamb and sear on all sides until nicely browned. Season with salt and pepper.
5️⃣ Pressure Cook the Meat
Pour the blended sauce over the meat. Transfer everything to a pressure cooker and cook for 50 minutes until the meat is tender.
6️⃣ Add the Rice
Add the soaked basmati rice directly into the cooked meat and sauce mixture. Taste and adjust salt.
If the meat is lean, add a small drizzle of oil for richer flavor.
7️⃣ Cook the Rice
Cook using the rice setting of your pressure cooker until the rice is tender and fluffy.
8️⃣ Garnish & Serve
Top with freshly chopped coriander and serve hot.
