Cucumber, Yogurt & Mint Salad (Jajik)

 


A refreshing yogurt salad made with cucumbers, mint, and garlic. Perfect alongside grilled meats, rice dishes, or as a light appetizer.

🛒 Ingredients

▢ 3 Persian cucumbers (about 2 cups chopped) 🥒
▢ 1 cup plain whole yogurt 🥣
▢ 1½ tbsp dried mint (or finely chopped fresh mint) 🌿
▢ ¼ tsp salt 🧂
▢ 1 large garlic clove, grated 🧄
▢ 1 tbsp olive oil 🫒

👩‍🍳 Instructions

1️⃣ Wash and dry the cucumbers thoroughly.

2️⃣ Using a teaspoon, remove the seeds from the cucumbers (optional, but helps prevent the salad from becoming watery).

3️⃣ Finely dice the cucumbers to your preferred size. For a smoother, dip-like texture, grate the cucumbers instead.

4️⃣ In a mixing bowl, combine the yogurt, cucumbers, dried mint, salt, and grated garlic.

5️⃣ Mix well until all ingredients are evenly incorporated.

6️⃣ Taste and adjust seasoning if needed. If you prefer a milder garlic flavor, reduce the garlic or substitute with garlic powder.

7️⃣ Transfer to a serving bowl and chill before serving.

8️⃣ Drizzle with olive oil just before serving.
