Madallaa – The Indulgent Middle Eastern Dessert


Soft, layered, and absolutely divine 😍

A soft basbousa layer at the bottom, crispy kunafa in the middle, topped with silky cream and caramel… a dessert that lifts your mood 💛

✨ Ingredients (in grams):

Basbousa Layer:

  • 300 g semolina
  • 150 g sugar
  • 150 g yogurt
  • 100 g melted butter
  • 1 tsp baking powder

Kunafa Layer:

  • 300 g shredded kunafa
  • 120 g melted butter
  • 60 g powdered sugar

Cream Layer:

  • 500 ml milk
  • 3 tbsp cornstarch (≈ 40 g)
  • 2 tbsp powdered cream (optional)
  • 3 tbsp sugar
  • 1 tsp vanilla
  • 1 can clotted cream (optional – for extra creaminess)

Caramel:

  • Ready-made or homemade caramel sauce (as desired)

🔥 Instructions:

1️⃣ Basbousa Layer:
Mix semolina, sugar, and baking powder. Add melted butter and yogurt, stirring until a firm batter forms.
Spread in a greased baking tray and bake at 180°C until half-cooked.

2️⃣ Kunafa Layer:
Mix kunafa with melted butter and powdered sugar. Spread over the partially baked basbousa.
Return to the oven until the kunafa turns golden and crispy.

3️⃣ Cream Layer:
In a saucepan, heat milk with sugar, vanilla, and cornstarch until it thickens.
Once slightly cooled, stir in clotted cream (if using).
Spread the cream evenly over the kunafa.

4️⃣ Serving:
After fully cooled, cut into squares or rectangles.
Drizzle or spread a layer of caramel sauce on top ✨
