Easy Fluffy Homemade Biscuits


These biscuits are big, tall, buttery, and unbelievably soft. Using a food processor makes the butter-cutting step super quick, but you can also use your hands or a pastry cutter.

🛒 Ingredients

2 cups (260g) all-purpose flour 🌾

5 tsp aluminum-free baking powder ✨

1/4 tsp baking soda

1 tbsp sugar 🍬

1 tsp fine sea salt 🧂

6 tbsp (85g) cold butter, cubed 🧈

3/4 cup + 2 tbsp (207ml) whole milk or buttermilk 🥛

👩‍🍳 Instructions

1️⃣ Preheat oven

Heat oven to 425°F (218°C). Prepare a 10–12 inch cast iron skillet or a baking sheet. 🔥

2️⃣ Mix dry ingredients

In a food processor, add flour, baking powder, baking soda, sugar, and salt. Pulse 3–4 times to mix.

3️⃣ Add butter

Add cold, cubed butter. Pulse 5–7 times until the mixture resembles tiny crumbs. 🧈✨

4️⃣ Add milk

Transfer mixture to a bowl. Make a well and pour in the milk or buttermilk. Stir gently until a shaggy dough forms.

5️⃣ Bring dough together

Transfer to a lightly floured surface. Bring dough together with your hands (add flour if sticky).

6️⃣ Fold for layers

Pat dough into a 3/4-inch rectangle → fold into thirds like a letter → rotate → repeat 2 more times. This creates flaky layers.

7️⃣ Cut biscuits

Pat dough to 1/2–3/4 inch thick. Cut biscuits with a 3-inch cutter. Do NOT twist the cutter.

8️⃣ Arrange & bake

Place biscuits close together in the skillet (helps them rise taller).

9️⃣ Use scraps gently

Press scraps together lightly and cut additional biscuits—don’t overwork.

🔟 Bake

Bake 10–15 minutes until tall, golden, and fluffy. Serve warm. 😍🥐
