🥖 Ingredients
For the Dough
- 300 ml warm water
- 1 tablespoon instant yeast
- 1 tablespoon sugar
- 360 g all-purpose flour
- 1 teaspoon salt
For the Topping
- 1 egg yolk
- 1 tablespoon water
- 2 teaspoons all-purpose flour
- 1½ tablespoons sesame seeds
- 1 tablespoon nigella seeds
👩🍳 Instructions
1️⃣ Prepare the Dough
- In a large mixing bowl, combine the warm water, instant yeast, and sugar.
- Add the flour and salt.
- Stir with a wooden spoon for about 2 minutes until a sticky, cohesive dough forms and no dry flour remains.
- Cover the bowl with plastic wrap or a clean kitchen towel.
- Let the dough rise for about 1 hour, or until doubled in size.
2️⃣ Shape the Bread
- Place two large sheets of parchment paper on your work surface and dust generously with flour.
- Transfer the risen dough onto the parchment paper and divide it into two equal portions.
- Using floured hands, gently shape each portion into a round disc about 24 cm (9½ inches) in diameter.
- Cover loosely with a kitchen towel and let rest for 40 minutes.
3️⃣ Preheat the Oven
- Place two baking trays or sheet pans inside the oven.
- Preheat the oven to 428°F (220°C) while the trays heat up.
4️⃣ Prepare the Topping
- In a small bowl, whisk together the egg yolk, water, and flour until smooth.
- Brush the mixture evenly over the surface of both dough rounds.
5️⃣ Create the Traditional Pattern
- Using your fingertips, gently press a circle around the dough about 2–3 cm from the edge.
- Inside the circle, create a crisscross pattern by pressing diagonal lines in both directions.
- Be careful not to tear the dough or deflate the air bubbles.
- Sprinkle generously with sesame seeds and nigella seeds.
6️⃣ Bake
- Carefully transfer the dough, along with the parchment paper, onto the preheated baking trays.
- Bake for 15–20 minutes, switching the trays halfway through baking for even browning.
- Bake until the bread is puffed and lightly golden brown.
7️⃣ Serve
- Remove from the oven and let cool on a wire rack for a few minutes.
- Slice and serve warm.
