No-Knead Turkish Bread (Ramazan Pidesi)

For the Dough

  • 300 ml warm water
  • 1 tablespoon instant yeast
  • 1 tablespoon sugar
  • 360 g all-purpose flour
  • 1 teaspoon salt

For the Topping

  • 1 egg yolk
  • 1 tablespoon water
  • 2 teaspoons all-purpose flour
  • 1½ tablespoons sesame seeds
  • 1 tablespoon nigella seeds

1️⃣ Prepare the Dough

  1. In a large mixing bowl, combine the warm water, instant yeast, and sugar.
  2. Add the flour and salt.
  3. Stir with a wooden spoon for about 2 minutes until a sticky, cohesive dough forms and no dry flour remains.
  4. Cover the bowl with plastic wrap or a clean kitchen towel.
  5. Let the dough rise for about 1 hour, or until doubled in size.

2️⃣ Shape the Bread

  1. Place two large sheets of parchment paper on your work surface and dust generously with flour.

4️⃣ Prepare the Topping

  1. In a small bowl, whisk together the egg yolk, water, and flour until smooth.
  2. Brush the mixture evenly over the surface of both dough rounds.

5️⃣ Create the Traditional Pattern

  1. Using your fingertips, gently press a circle around the dough about 2–3 cm from the edge.
  2. Inside the circle, create a crisscross pattern by pressing diagonal lines in both directions.
  3. Be careful not to tear the dough or deflate the air bubbles.
  4. Sprinkle generously with sesame seeds and nigella seeds.

  1. Carefully transfer the dough, along with the parchment paper, onto the preheated baking trays.
  2. Bake for 15–20 minutes, switching the trays halfway through baking for even browning.
  3. Bake until the bread is puffed and lightly golden brown.

7️⃣ Serve

  1. Remove from the oven and let cool on a wire rack for a few minutes.
  2. Slice and serve warm.
