Shish Tawook
🛒 Ingredients
🍗 2 pounds boneless, skinless chicken breast, cut into large chunks
🥛 ½ cup plain whole milk yogurt
🍋 ¼ cup lemon juice
🫒 ¼ cup olive oil
🧄 6 garlic cloves, crushed
🍅 1 tbsp tomato paste
🌶️ 1 tsp paprika
✨ ¾ tsp cinnamon
🌿 ½ tsp oregano
🫚 ½ tsp ground ginger
🧂 1 tsp salt
⚫ ¼ tsp black pepper
🌿 For Serving (Optional)
🫓 Pita bread
🥬 Lettuce
🧄 Garlic sauce
🧅 Onion wedges
👩🍳 Instructions
1️⃣ In a large bowl, combine the yogurt, lemon juice, olive oil, garlic, tomato paste, paprika, cinnamon, oregano, ginger, salt, and black pepper.
2️⃣ Whisk well until the marinade is smooth and fully combined.
3️⃣ Add the chicken chunks to the bowl and coat them evenly with the marinade.
4️⃣ Cover and refrigerate for at least 4 hours to marinate.
5️⃣ Thread the marinated chicken onto skewers. Add onion wedges between the chicken pieces if desired.
6️⃣ Preheat the grill to medium heat.
7️⃣ Grill the skewers for 5–8 minutes per side, turning occasionally, until the chicken is fully cooked and lightly charred.
8️⃣ Remove from the grill and allow to rest for a few minutes.
9️⃣ Serve with pita bread, lettuce, and garlic sauce if desired.
