Moroccan Salmon Recipe - How to Make Moroccan Salmon


Easy, tasty and healthy recipe for Moroccan salmon. Enjoy the Moroccan way of cooking healthy and simple baked salmon dish. This salmon recipe consists of olive oil, onions, garlic, cumin, turmeric, cinnamon, tomatoes, raisins, bay leaf, and thick pieces of salmon fillet.

Yield: 4 servings

Ingredients
2 tsp olive oil
2 cups thin half-slices onions
2 tsp minced garlic
3⁄4 tsp ground cumin
3⁄4 tsp turmeric
3⁄4 tsp salt
1⁄8 tsp ground cinnamon
3 plum tomatoes, cut in thin wedges
1⁄4 cup raisins, preferably golden
1 bay leaf
Four 1-in.-thick pieces salmon fillet (6 to 7 oz each)

Preparation - Moroccan Salmon
  1. Heat oven to 425°F. Have ready a large baking dish.
  2. Heat oil in a large nonstick skillet over medium-low heat. Add onions, garlic, cumin, turmeric, salt and cinnamon. Cover and, stirring occasionally, cook 10 minutes or until onions start to soften. Stir in remaining ingredients except salmon; cover and cook 3 minutes or until tomatoes begin to soften.
  3. Place salmon in one layer in baking dish; top with onion mixture. Cover tightly and bake 20 to 30 minutes until fish is opaque at thickest part. Discard bay leaf.
Good with whole-wheat couscous.
