Envelope Phyllo Pastry Recipe (Turkish Börek)

Turkish Börek

Borek refers to any dish made with yufka (filo or phyllo) dough. Filo is a kind of very thin unleavened dough used for making pastries such as baklava and borek. The secret for the Envelope Phyllo Pastry is the special mixture.

Ingredients

2 phyllo sheets.

For the sauce:

A half tea cup of milk,
A half tea cup of vegetable oil,
2 eggs (one of the eggs’ egg yolk is for the top).

For the filling:

1 cup of cottage cheese or feta cheese,
Parsley.

To brush:

1 egg yolk,
Sesame,
Black cumin seeds.

The cup size: 200 ml.
The tea cup size: 110 ml.

Process of Envelope Phyllo Pastry Recipe (Turkish Borek)

Firstly, to prepare the sauce, mix the milk, vegetable oil and the eggs in a deep bowl.
Secondly, to prepare the filling, combine the cheese and some washed and chopped parsley in separate bowl.

Lay one of the phyllo on a plain surface and brush the sauce on it.
Then lay the second phyllo sheet on the first one. And also brush the sauce on it.
Fold the phyllo sheet by pulling the right and the left edges into the center. And get a square.
Brush the sauce on the square and place some fillings on the corners.
Pull the corners into the center, so you end up with a phyllo envelope.
Place the envelope shaped phyllo sheet on a baking sheet into a baking tray.
Mix the sauce left and the egg yolk and brush the mixture on the envelope phyllo sheet.
Then cut the envelope phyllo sheet in 8 pieces with the help of a knife.
You get 8 triangles.

Sprinkle some sesame and black cumin seeds on them.
Bake the envelope phyllo pastry into the preheated oven to 180°C until they get golden brown.
After baking, serve hot.

If you want, you can prepare any fillings such as potato or ground beef.
