Lebanese Baba Ghanoush
🛒 Ingredients
🍆 1 large eggplant
🥣 ¼ cup tahini
🍋 3–4 tbsp lemon juice
🧄 2 garlic cloves
🧂 ¼ tsp salt
🌿 For Serving
🫒 Olive oil
❤️ Pomegranate seeds
🫓 Pita chips
👩🍳 Instructions
1️⃣ Preheat the oven to 400°F (200°C).
2️⃣ Wrap the eggplant in aluminum foil and roast for 45–60 minutes, until very soft when pierced with a fork or knife.
3️⃣ Remove the eggplant from the oven, unwrap it, and let it cool for 10 minutes.
4️⃣ Cut off the top of the eggplant and peel away the skin. Discard the skin and keep only the flesh.
5️⃣ Place the eggplant flesh in a food processor or blender.
6️⃣ Add the tahini, lemon juice, garlic cloves, and salt.
7️⃣ Pulse a few times until the ingredients are combined but the mixture remains slightly chunky.
8️⃣ Transfer to a serving dish.
9️⃣ Drizzle with olive oil and garnish with pomegranate seeds.
🔟 Serve with pita chips and enjoy!
