Lebanese Fattoush Salad

 


🛒 Ingredients

🥬 Salad

🥬 1 large head romaine lettuce, chopped
🍅 1 large vine-ripe tomato, diced
🥒 2–3 Persian cucumbers, quartered
🫑 ½ large green pepper, chopped
🌶️ 5 radishes, diced
🧅 2 green onions, sliced
🌿 ¼ cup chopped parsley

🥣 Dressing

🫒 3 tbsp olive oil
🍋 2 tbsp lemon juice
🧄 2 garlic cloves, pressed or grated
🌺 1 tsp sumac
🍯 1 tsp pomegranate molasses
🌿 ½ tsp dried mint
🧂 ½ tsp salt
⚫ Black pepper to taste

🫓 Fried Pita Bread

🫓 1 large double-ply pita bread, cut into triangles
🫒 3 tbsp olive oil
🧂 Salt and pepper to taste

👩‍🍳 Instructions

1️⃣ In a small bowl, whisk together the lemon juice, garlic, sumac, pomegranate molasses, dried mint, salt, and black pepper.

2️⃣ Slowly drizzle in the olive oil while whisking continuously until the dressing is well combined. Set aside.

3️⃣ Heat the olive oil in a large skillet over medium heat.

4️⃣ Add the pita bread triangles and season with salt and pepper.

5️⃣ Cook, stirring frequently, until the pita becomes crispy and golden brown, about 5–7 minutes. Set aside.

6️⃣ In a large serving bowl, combine the romaine lettuce, tomato, cucumbers, green pepper, radishes, green onions, and parsley.

7️⃣ Pour the dressing over the vegetables and toss well to coat evenly.

8️⃣ Add the crispy fried pita bread immediately before serving and gently toss.

9️⃣ Serve fresh and enjoy!
