Lahm Bi Ajeen (Sfiha) – Middle Eastern Meat Flatbread

🛒 Ingredients
Dough Ingredients
- 1 cup Warm Water, divided 💧
- 1 tsp Granulated Sugar 🧂
- 1 package (2 ¼ tsp) Active Dry Yeast 🍞
- 3 cups All-Purpose Flour 🌾
- 2 tbsp Dry Powdered Milk 🥛
- 1 tsp Salt
- ¼ cup Olive Oil 🫒
Filling Ingredients
- 1 lb Ground Beef 🥩
- 1 Onion, finely diced 🧅
- 1 tbsp Tomato Paste 🍅
- 1 tbsp Pepper Paste 🌶️
- 2 Tomatoes, finely diced, seeds removed 🍅
- 1 tbsp Pomegranate Molasses
- ½ tsp Salt 🧂
- ¼ tsp Black Pepper
- 1 tbsp 7 Spice 🌿
- ½ cup Parsley, finely chopped 🌱
👩🍳 Instructions
Dough
1️⃣ In a small bowl, combine ½ cup warm water, 1 tsp sugar, and 1 package yeast. Mix and set aside for 10 minutes to let the yeast rise.
2️⃣ In a large bowl, mix 3 cups flour, 2 tbsp powdered milk, and 1 tsp salt.
3️⃣ Once yeast has risen, add the yeast mixture and ¼ cup olive oil to the flour.
4️⃣ Knead by hand or with a stand mixer for 5 minutes, gradually adding the remaining ½ cup water. Dough should form a smooth ball; add flour if too sticky.
5️⃣ Grease a bowl, place the dough inside, cover with a towel, and let it rise in a warm, dark place for 1 hour or until doubled in size. ❄️
Filling
6️⃣ While dough rises, mix all filling ingredients in a bowl and set aside. 🥩🍅🧅
Assembly & Baking
7️⃣ Preheat oven to 450°F.
8️⃣ Divide dough into 10 equal portions. Roll each portion into ¼" thick circles and prick lightly with a fork.
9️⃣ Divide filling into 10 equal portions and top each dough circle, leaving edges free like a mini pizza.
🔟 Place on 2–3 cookie sheets and bake for 12–15 minutes until dough is fully cooked.
1️⃣1️⃣ Turn oven to high broil and broil for 2–3 minutes until meat is browned.
