Grilled Chicken

Juicy, flavorful whole chicken with a deep marinade and perfect oven grilling.

Ingredients:

1 whole chicken (about 1600 g), washed thoroughly

Brining Solution:

2 liters water
1/4 cup salt
1/4 cup sugar
1/4 cup white vinegar
Juice of 1 lemon
2 bay leaves
2 cardamom pods
1/4 cup black peppercorns
Marinade:

1 cup yogurt
2 onions
2 tomatoes
1 hot green pepper
1 tbsp minced garlic
1 tbsp salt
1 tsp black pepper
1 tsp chicken seasoning
1 tsp paprika
Juice of 1 lemon
2 tbsp pomegranate molasses
2 tbsp soy sauce

Instructions:

  1. Butterfly the chicken by cutting it open from the back and make small slits in the meat.

  2. Prepare the brine by mixing water, salt, sugar, vinegar, lemon juice, and spices.

  3. Soak the chicken in the brine for at least 2 hours.

  4. Prepare the marinade by blending onions, garlic, tomatoes, hot pepper, yogurt, and all spices until smooth.

  5. Remove the chicken from the brine and pat dry very well.

  6. Rub the marinade all over the chicken, making sure it gets into the slits.

  7. Marinate for at least 1 hour or overnight for best flavor.

  8. Place the chicken on a rack in the oven and roast at medium heat for 45–60 minutes, depending on size, until fully cooked and golden.
