Lebanese cuisine includes an abundance of starches, whole grain, fruits, vegetables, fresh fish and seafood; animal fats are consumed sparingly. Poultry is eaten more often than red meat. When red meat is eaten it is usually lamb on the coast, and goat meat in the mountain regions. It also includes copious amounts of garlic and olive oil, often seasoned by lemon juice.; olive oil, herbs, garlic and lemon are typical flavors found in the Lebanese diet.

Sheik al Mehshee

Sheik al Mehshee  or Sheikh El Mahshi means the sheikh of stuffing. So of all the vegetables that Lebanese stuff Sheik al Mehshee has the best taste. The eggplants give out wonderful flavors with the meat and pine nuts.

Shish Taouk - Lebanese Chicken Skewers

Malfouf is a traditional Lebanese dish which involves rolling cabbage leaves with a stuffing of ground meat, rice, 7-spices (of course), then stacking them in a cooking pot in layers with garlic in between, and then simmering them on low heat in a sauce made with lemon juice, fried minced garlic, water and salt.

Mamool

Ma'amoul (Arabic: معمول‎) are small shortbread pastries filled with dates, pistachios or walnuts (or occasionally almonds, figs, or other fillings). They are popular in Palestine, Lebanon, and other Levantine countries. They may be in the shape of balls or of domed or flattened cookies. They can either be decorated by hand or be made in special wooden moulds.

Lebanese Kebbeh

Kibbeh is virtually the national dish of Lebanon and to call it a meat loaf does not quite raise it to the heights it deserves. Its traditional preparation is dramatic. It requires a stone mortar and a heavy pestle called the jorn and modaqqa. The meat is pounded with rhythmic motions until it is smooth and pasty. All the neighborhood knows the sound of kibbeh in the making.
